Pod\u013ea niektor\u00fdch odborn\u00edkov na v\u00fd\u017eivu s\u00fa pomerne kontroverzn\u00fdm v\u00fdrobkom a mnoh\u00ed pova\u017euj\u00fa jeho benefity pre zdravie za diskutabiln\u00e9.<\/p>\n<p>D\u00f4vodom v\u0161etk\u00e9ho s\u00fa ochrann\u00e9 l\u00e1tky v obale zrna &#8211; lekt\u00edny, na \u0161kodlivos\u0165 ktor\u00fdch st\u00e1le neexistuje jednotn\u00fd uhol poh\u013eadu. P\u0161enica a in\u00e9 obilniny pou\u017e\u00edvaj\u00fa tieto l\u00e1tky s cie\u013eom chr\u00e1ni\u0165 sa pred \u0161kodcami: nejak\u00e1 z\u00e1kern\u00e1 mo\u013ea sa chce dosta\u0165 do stredu zrna a pr\u00e1ve s t\u00fdmito lekt\u00ednmi sa rastlina pok\u00fa\u0161a zabezpe\u010di\u0165, a) aby to \u0161kodcovi ubl\u00ed\u017eilo resp. mu aspo\u0148 pri\u0161lo zle a b) aby \u0161kodca nemohol vstreba\u0165 v\u0161etky \u017eiviny zo zrna. Preto lekt\u00edny patria medzi antinutrienty. Je to tak\u00fd paradox: obalov\u00e9 vrstvy zrna s\u00fa na jednej strane bohat\u00fdm zdrojom vitam\u00ednov a miner\u00e1lnych l\u00e1tok zdraviu prospe\u0161n\u00fdm, ale na druhej strane obsahuj\u00fa aj antinutrienty, ktor\u00e9 zabra\u0148uj\u00fa vstreb\u00e1vaniu toho prospe\u0161n\u00e9ho.<\/p>\n<p>Netreba zabudn\u00fa\u0165 ani na fakt, \u017ee celozrnn\u00e1 m\u00faka je kontaminovan\u00e1 zostatkami chemick\u00fdch l\u00e1tok, ktor\u00e9 sa dnes pou\u017e\u00edvaj\u00fa v agropriemysle (sn\u00e1\u010f v produktoch vyd\u00e1van\u00fdch za &#8222;bio&#8220; je toho v\u00fdrazne menej). Obalov\u00e9 vrstvy s\u00fa aj preto obalov\u00e9, aby sa nikto a ni\u010d nedostalo do jadra a kl\u00ed\u010dku, tak\u017ee v\u0161etka ch\u00e9mia spolu s lekt\u00ednmi zost\u00e1va v horn\u00fdch vrstv\u00e1ch, ktor\u00e9 sa potom mel\u00fa do celozrnnej m\u00faky.<\/p>\n<p>Z jednej strany sa hovor\u00ed, \u017ee \u013eudia nie s\u00fa \u017eiadne chrob\u00e1ci, pre\u010do by sme sa mali b\u00e1\u0165 lekt\u00ednov? Hmyz je mal\u00fd, \u013eudia s\u00fa ve\u013ek\u00ed, \u00fa\u010dinok lekt\u00ednov bude ove\u013ea slab\u0161\u00ed. Opa\u010dn\u00fd n\u00e1zorov\u00fd t\u00e1bor sa nevzd\u00e1va: ale \u013eudia toho viac aj zjedia. D\u00f4le\u017eit\u00e9 je nie len to, \u017ee sa neabsorbuj\u00fa u\u017eito\u010dn\u00e9 l\u00e1tky, navy\u0161e lekt\u00edny prispievaj\u00fa k r\u00f4znym z\u00e1palom a aj k syndr\u00f3mu zv\u00fd\u0161enej priepustnosti \u010dreva. Mimochodom aj pestovanie modern\u00fdch odr\u00f4d p\u0161enice bolo zameran\u00e9 na odolnos\u0165 vo\u010di \u0161kodcom a t\u00fdm p\u00e1dom aj lekt\u00ednov je tam e\u0161te viac, \u010do by mohlo ma\u0165 s\u00favis so zvy\u0161uj\u00facim po\u010dtom \u013eud\u00ed, u ktor\u00fdch sa za\u010dala prejavova\u0165 citlivos\u0165\/nezn\u00e1\u0161anlivos\u0165 na lepok alebo obilniny ako tak\u00e9.<\/p>\n<p>Ak vezmeme do \u00favahy, \u017ee modern\u00e9 potraviny a met\u00f3dy ich pr\u00edpravy (hlavne deaktiv\u00e1cia pr\u00edrodn\u00fdch enz\u00fdmov na predl\u017eovanie trvanlivosti) nie v\u017edy zlep\u0161uj\u00fa zdravie, na\u010do prid\u00e1va\u0165 organizmu \u010fal\u0161\u00ed stres? \u010co sa s t\u00fdm d\u00e1 robi\u0165? Samozrejme, kv\u00e1skova\u0165. Kv\u00e1skovanie dok\u00e1\u017ee v zna\u010dnej miere zne\u0161kodni\u0165 lekt\u00edny (dokonca aj kyselinu fytov\u00fa), tak\u017ee celozrnn\u00fd kv\u00e1skov\u00fd chlieb je st\u00e1le zdraviu prospe\u0161n\u00fd.
